Yellow-gold. A bit ham-fisted at first but this finds its equilibrium quickly. On the nose this is dry with some subtlety with a Asian patina: pitted orchard fruit, sandalwood, kombu, graphite. More sake-like nuances with air and time in the glass. On the palate a sleek, wintery fruit granita of bergemot, pomelo and apple skins, garnished with coriander. Rind of the grapefruit acidity gives this counterpoint and piquancy. Dashi-broth finish. Savory, appetizing and individual. For drinking soon.
