Yellow-gold. Expressive in its brothy intimations and Asian tonality: dashi stock, sake, shiitake mushroom. Mirabelle edged in lemon balm. Miso-brine finish with a hint of sweet-old-cask. Nice touches of refinement here: both bead and mousse are of fine quality. Succulent, savory Crémant du Jura. For drinking soon.
