Minimum three years on the lees.  100% Gringet raised in concrete eggs with no dosage.  Organic/BIO.

Burnished with a nod towards antique bronze.  Carnal yet euphoric and dizzy in its array of suggestions: fish sauce, fermented bean paste, well-hung game, malt.  Sauvage, floral-honeyed, richly oxidative.  Greengagey fruit, seasoned with alpine herbs and marrow-rich pan drippings.  A holiday nuttiness.  Dense with a tilt towards slurried.  Tamari and chalk finish.  Not the greatest depth but flush with individuality and grinning like a cheshire cat.  For drinking soon.
