100% Chardonnay from grand cru vineyeards in Chouilly. 2008 base vintage, plus 30% reserve wines. Traditional vinification process, partially in barrels. At least four+ years on the lees. No more than 5 g/l dosage. Current release.
Yellow-gold. Pungent, richly flavorsome and outsized: butter-sautéed pear and spiced mirabelle strained though shellfish reduction and Chouilly chalk. Racy and detailed underneath: shiro-soyu finish. Intense, umami-tinged Chouilly. Extroverted in expression today and has the stuffing to develop well. Now – 2018+.
