Fleury Père et Fils, Brut Millésimé Aube 1996

Fleury 1996 #1

80% Pinot Noir, 20% Chardonnay from vineyards in Courteron. Raised in stainless steel.  Organic/BIO.  Full malo and he still weighs in at 6% total acidity.  Sur lie aging under cork.  2009 release.

Coppery, in color and flavor, a primordial distillate of veal stock, alfalfa hay, and rock dust. The palate is staggering, a mass of matter with an animal streak through the middle. Finishes penetrating and brothy. The style is a firebrand, his guts-grace ratio tilting entirely towards the former. To be loved (he’s pastoral!) or left (he’s rustic!), as if there can be no middle ground. Food is a must. Now.
