Garnet.  Appetizing capsicum flavors, such as the anaheim or jalapeño … those green peppers whose nuanced flavor profile stops short of extreme heat.  All-in with the tertiary stuff: cave-aged gruyère, cèpes, pancetta, lots of metallic associations and the paper-y mustiness of your grandfather’s study.  This edible Pomerol terroir is best served with braised lamb shoulder.  Now.
