Perrier-Jouët, Brut Extra Dry Épernay

A blend of more than fifty crus across Champagne AOC.  40% PN from the Montagne de Reims, 40% Meunier from the Vallée de la Marne, 20% Chardonnay from the Côte des Blancs.  Base vintage plus 20% reserve wines.  Dosage:  3 – 6 g/l.  Disgorged July 25 2011.

Yellow-gold.  Shiso leaf and loomi and a saline, crustacean-infused savor.  The white fruit is more than expressive enough to compensate for the lower dosage but if you are going to cellar one cuvée choose the Grand Brut.  Now.
