Maison William Fèvre, Chablis Fourchaume 1er Cru 2002

Fevre Fourchaume 2002 #5

June 2014

Last bottle.  A more gilded sheen now with the burnished flavors of blossom-honey and walnut oil that come with full maturity.  Notions of stagnant tidal pool.  Still shimmery, vigorous and citric on the palate.  Resonant acidity in ’02 that was built to age; this will always keep well.

June 2012

Lemon-yellow with a streak of emerald.  Lavish now yet composed: stone fruit, rowan perfume and shellfish-stock.  Still aurora borealis bright on the palate: balsam apple, lime crème.  Firm lattice of oyster-shell minerality.  Nothing blockbuster about it; sleek, mature Chablis character now at age eleven. Drink soon.
