Thirty five years on.
Ochere. Fully mature and beautifully expressive, the wine offers a deeply complex aromatic profile marked by classic savory and tertiary notes. Smoke, cigar box, and old library tones lead into layers of smoked game, bacon, truffle, and subtle barnyard character, all interwoven with red and black cherry fruit. Hints of orange peel, clove, soy, and dried flower accents add further nuance.
On the palate, the wine is medium-weight and harmoniously resolved. The texture is smooth and supple, with tannins fully integrated yet still lending gentle structure. The fruit remains present but now sits comfortably alongside earthy, meaty, and spice-driven elements, creating a distinctly mature and savory expression. Acidity is softened, contributing to the wine’s round, seamless feel.
Overall, this is a compellingly complex, fully evolved wine showing complete maturity, balance, and considerable charm. Drinking beautifully now. Grown in gneiss and ferruginous mica schist from lieu-dits Côte-Blonde and Côte Brune, where the gneiss and ferruginous mica schist give the wine its mix of floral lift, savory depth, and mineral drive. 100% destemmed. Ambient yeast fermentation in concrete vat. 20% new oak.
