Approximately two-thirds Pinot Noir (of which 15% is still PN from Ambonnay and Bouzy) and 30% Chardonnay. Chardonnay is sourced from a number of crus in the Marne and Aube; the Pinot, from Ambonnay, Bouzy and Les Riceys. Aged at least three years in Taittinger’s caves. Disgorged May 2011. Peachy pink. Perfumed, paradaisal nose with a savory herb lustre: early summer reds, puff-pastry, wood sorrel, orange blossom. Cool and verdantly rich, with notions of white truffle, succulent fern and green forest-y earth. Groseille, blood orange and rhubarb fruit, quite etched and piquant. Markedly dry. Huckleberry and tree bark finish. We relish the ying-yang counterpoint of the tart and the bitter while recognizing that intimations of fruit seed and fruit pit isn’t everyone’s cup of tea. Elegant, punctilious, buttoned-up Rosé. Like Billecart-Salmon, we prefer this vinous Rosé with at least a couple years in the cellar. Now – 2015.
